Distant and in some ways still mysterious origins, carob is a symbol of nourishment and popular memory.

 

Carob is the fruit of an evergreen tree, the Carob (Ceratonia siliqua), widespread throughout the Mediterranean basin, but especially in Sicily. The fruit has the typical tapered shape, oblong, similar to a bean pod, when ripe it is brown in colour.

 

Each carob contains carats inside, flattened seeds, roundish, very hard, known for their curious property: they all have the exact same weight, so much so that they were used as a unit of measurement for gold.
